Jubilee Farm provides local flavor for “Seasonal Saturdays” at Engrained Brewing Company

Jubilee Farm, a sponsored ministry of the Dominican Sisters of Springfield, Illinois is the first farm  featured for Engrained ‘s “Seasonal Saturdays”, starting on Saturday July 26. All summer long, Engrained Brewing Company in Springfield, IL will feature a menu item made with ingredients from a local farm.

The Jubilee Farm menu item for Seasonal Saturday was: Lemongrass Lo Mein Chicken with an infused consommé made from scratch by Chef Brad, housemade Lo Mein noodles, farm fresh chicken breast simmered in the consommé with shitake mushrooms and carrots and finished with 5 herbs from Jubilee Farm (lemongrass, lemon verbena, lemon thyme, and purple and green basil).

Engrained Brewing Company’s Chef Brad and the Dominican Sisters are excited about a new agreement to provide herbs, blackberries, tomatoes and perhaps more on a regular cycle through the growing season. Engrained contracts with local farms in central Illinois to provide products for the restaurant in keeping with their motto:  Sustainable, Local, Natural…It’s Engrained!

This creative, cooperative effort reflects Jubilee Farm’s commitment to sustainability and the Dominican Sisters of Springfield, Illinois’ General Chapter themes of reverence for all creation, right relationship and collaboration.
